Last week I posted about my favorite Winter comfort food, Johnny Marzetti - or rather, my take on the classic Ohio staple.
The basic recipe I have formulated used ground beef. In the last 8 - 10 months I have been following Weight Watchers and have "leaned up" a few of my favorite recipes. So this recipe uses ground turkey. The first time I made this from ground turkey, it fell flat. There's just something about the taste of ground beef that can't be replaced - or so I thought. I figured out a way to have my turkey Johnny Marzetti and not miss the wonderful flavor of beef!

1.5 lb ground beef
1 can condensed cream of mushroom soup (10.75 oz.)
10 - 11 oz of Velveeta cheese
approx. 2 - 3 cups of elbow macaroni - cooked
salt
pepper
But instead of ground beef, here is my secret for using ground turkey!
Beef bouillon! It will give you that beef flavor without the fat and cholesterol!
So let's keep going. Brown the ground turkey as you would ground beef. I add some sunflower or walnut oil just to give it a bit of flavor. Add a tablespoon of beef base or two bouillon cubes dissolved in 2 tablespoons of hot water.

Add cream of mushroom soup to ground turkey.
Put water on to boil for the macaroni
Add macaroni to boiling water.
Put water on to boil for the macaroni
Add macaroni to boiling water.
While macaroni cooks, cut about 10 - 11 ounces of Velveeta cheese into cubes and add to the turkey and mushroom soup mixture
Drain macaroni and add to meat mixture.
Mix well and put in oven for 10 - 15 minutes.
Serve up hot.

This stores in the fridge very well. Heats up in the microwave easily.
You could add all sorts of things to this recipe: fresh mushrooms, onions, garlic, bits of bacon.......but this is my absolute favorite way to eat it; just very simply.
